Over fueling problem

Hi,
I've got a 2000 3.4 convertible. I believe I've got an over fueling problem. When started from cold it holds the revs high and you can't rev it higher. When its slightly warmer you can drive it but it's very hesitant and jerky.
Do you think its over fueling?
If so why and how?
If not what could it be?

ive just disconnected the air mass sensor. its like a new car ! thanks so much for your knowledge ! will be ordering a new sensor tomorrow..
